Horseradish (Armoracia lapathiofolia)

The plant is two to three feet tall in two years, perennial from root cuttings in early spring. It has many medicinal uses.

Horseradish is whipped into sauces and added to cream, mayonnaise and butter. It may also be mixed with sausage, ham, liver and fish.

Horseradish contains sinigrin, a crystalline glucoside that will decompose in water, and the enzyme myrosin vit. B, asparagin, thiocyanogen compounds. Only the scraping of the root in its fresh state unites sinigrin and myrosin so that a volatile oil, allyl, is formed. On exposure to air the root will turn colour and lose its strength. It will also lose strength if boiled in water, hence only effective in its fresh state. Horseradish contains much sulphur and some bitter resin, sugar, starch, gum, albumin and acetates.

It is a rubefacient, diuretic and stomachic, laxative. Fresh it is good for gout, rheumatic problems and bladder infections, colitis, damp lung problems, sinus congestion, and asthma and added to baths for chilblains. As a juice it is helpful in colitis and intestinal problems. It may be used externally as a counter irritant to stimulate blood circulation or as a poultice for pains in joints, and injuries. For bladder infections horseradish wine is used. Without having its order, horseradish all the advantages of garlic.

Hyssop (Hyssopus officinalis)

The plant is two to three feet tall, perennial sown in late spring, easily transplanted and will reseed itself. Planted done near cabbage or grapevines and away from radishes, germinate in eight to fourteen days.

It contains a volatile oil, tannin and a glycoside (disomine).

Hyssop may be used in stews and salads and with rich or fatty fish. It also tames the flavor of game meats.

Hyssop is a carminative, astringent, emmenagogue, expectorant, stomachic, tonic and stimulant. It can be combined with sage to make a gargle for sore throat, cold, flu. Hyssop tea can be used for poor digestion and lung and breast problems, asthma, and chronic bronchitis, as well as for nose and throat infections, mucous congestion, jaundice and dropsy.

A decoction helps relieve inflammations, and a wash is used for bruises, skin irritations and burns. Externally crushed leaves can be directly applied to wounds to cure infection and to promote healing.

Oregano (Origanum vulgare)

The plantis one feet tall, perennial sown in the late spring, germinate in eight to fourteen days. It is used with meat, also cook leaves with peas and beans. It is good with tomato soups. And it is much used in Italian and Mexican cooking. The part used is aerial portions.

It contains essential oil, terpenes, and tannins, and properties are pungent, stomachic, aromatic, tonic, stimulant, emmenagogue, carminative and diaphoretic. It promote perspiration and thus treats cold, flu, and fevers. It strengthens the stomach and promotes appetite, good for indigestion & consumption, expels gas from the stomach and bowels and poisons from the body. In addition, it is used for suppressed menstruation, yellow jaundice and dropsy.

Oregano juice is helpful against deafness and pain and noise in the ears. Oil dropped in the hollow of an aching tooth will stop pain. A poultice is good for swellings, sprains, boils and carbuncles. Oregano is also good for nerves. It is used for baths and inhalations also.
